You can smell when something is made the right way.

Walk through our door in the morning and you’ll probably notice it before anything else—the aroma of bread coming out of the oven. That smell tells you something about how we make food here.

It Starts With the Grain

Whole wheat, milled fresh in our bakery.

We start with whole wheat kernels—not just a bag of flour. We mill the grain fresh in our Cary bakery, keeping the bran, germ and endosperm together. The whole kernel goes into the mill, and whole-grain flour comes out.

What goes in is what comes out.

We mill fresh and use the flour fresh because of what it does for flavor, quality and the goodness of the whole grain—not to stretch shelf life.

Five ingredients. Nothing to hide.

Our Honey Whole Wheat is the simplest expression of what we believe good bread can be.

  • 100% Whole Wheat Flour
  • Filtered Water
  • Pure Honey
  • Yeast
  • Salt

That’s it.

Time is an ingredient too.

We don’t rush bread simply to make more of it faster. Dough is mixed, kneaded, shaped, given time to rise, and baked by people here in the bakery. Flavor and texture develop through the process—not through shortcuts.

The whole grain means all of the grain.

A wheat kernel has three natural parts. Whole grain keeps all three together.

Bran
The protective outer layer, naturally containing fiber, B vitamins, minerals and plant compounds.
Germ
The part that can sprout into a new plant, naturally containing healthy fats, B vitamins, vitamin E, protein and minerals.
Endosperm
The largest part of the kernel, providing carbohydrates along with protein, vitamins and minerals.

We mill the whole kernel because we want the flavor, texture and goodness of the grain—not just part of it.

Then There’s the Aroma

The best part may be the part we can’t put on a website.

The smell.
